- Mixed Berry Chia Pudding
The chia seeds are a great source of omega-3 and omega-6 oils. They are high in fibre and very soothing for your digestive tract. They also taste yummy!
Once you have placed all ingredients into your blender (I use a Thermomix; You may need to adjust the speed and timing depending on the blender you use). The aim is to blend all ingredients to ensure a smooth consistency.
Based on my Thermomix, I blend the ingredients for about 20-30 seconds on a speed of 8, then pour into your ramekin and set aside for 30 minutes or so. I leave them in the fridge overnight.
Ingredients:
- 50g chia seeds
- 350g almond milk
- 200g fresh or frozen mixed berries
- 100g dates
- 1/2 teaspoon of good quality vanilla (or extract)
- 30g cashews
- 50g coconut cream
I often eat this on its own, but if you prefer, you can top it with fruit, goji berries, pumpkin or sunflower seeds.
