Mixed Berry Chia Pudding

This is one of my all-time favourite breakfasts, mainly because it feels so decadent and at the same time is good for me. You can prepare the night before. I find with this quantity (depending on the size of your ramekins, or small bowls) you can make up to 6 servings. My whole week is sorted!

The chia seeds are a great source of omega 3 and omega 6 oils. They are high in fibre and very soothing for your digestive tract. They also taste yummy!

Once you have placed all ingredients into your blender (I use a Thermomix. You may need to adjust the speed and timing depending on the blender you use). The aim is to blend all ingrediants to ensure a smooth consistency.

Based on my Thermomix, I blend the ingredients for about 20 -30 seconds on a speed of 8, then pour into your ramekin and set aside for 30 minutes or so. I leave them in the fridge overnight.

Ingredients:
  • 50g chia seeds
  • 350g almond milk
  • 200g fresh or frozen mixed berries
  • 100g dates
  • 1/2 teaspoon of good quality vanilla (or extract)
  • 30g cashews
  • 50g coconut cream

I often eat this on its own but if you prefer, you can top with fruit, goji berries, pumpkin or sunflower seeds.
